The Star Wars DVDs being released are the original trilogy of movies that played in the theaters the first time around (the "Han Shot First" editions) without any of the CGI changes that were added to them when they were re-released a few years ago. Will there be a 6-pack edition someday? Probably, although I don't think they've annouced any plans to do so yet. I would bet that there will be at least two six-pack editions -- one with the original "unenhanced" trilogy and another with the "enhanced" original trilogy.

Then they'll do it all over again when/if HD DVDs take off. And they'll keep on doing the multiple version mish-mash when the TV series comes out too because they know the hardcore fans will buy them every time.
